TEABITES

BLACK TEA ICE CREAM

SERVINGS: 4

 

INGREDIENTS:

½ liter of milk

5 egg yolks

11/4 cups sugar

1 Tbs

Assam tea

 

PREPARATION:

Bring half the milk to a boil. Meanwhile, add the sugar to the egg yolks beat until the mixture becomes whitish. Add it little by little to the cold milk and set aside. Steep the tea in the hot milk for four minutes, strain the leaves, strain the leaves , ad beat the hot milk into egg yolk mixture. Pour into a pan and cook over very low heat for five minutes, stirring continuously with a wooden spoon. Cool completely and freeze according to manufacture’s instructions in am ice cream maker.

 

TEA GRANITA

SERVINGS: 4

 

INGREDIENTS:

11/2 cup sugar

2 Tbs powdered milk

¼ cup white rum

PREPARATION:

Steep the tea in 1 quart of boiling water for ten minutes. Strain the leaves and add 1 cup of sugar to the tea, stirring well. Pour into a glass or ceramic baking dish and place in the freezer.

When small patches of ice crystals appear on the surface, remove the dish from the freezer and transfer contents to a food processor. Add the powdered milk and process briefly to break up crystals. Return mixture to the freezer for ten minutes until mixture begins to resemble a cream. Add the rum and the remaining sugar. Blend one last time, return to the  freezer briefly and serve immediately into individual bowls.
