TEA TIME BITES

EARL GREY SAUCE

INGREDIENTS:

1 Cup Chicken Stalk1 Tablespoon Earl Grey Tea¼ Cup Heavy Cream2 Tablespoon SugarSeveral Drops of Lemon Juice   Salt   Pepper

PREPARATIONS:

Bring the chicken stalk to boil, then steep the tea in it for three minutes. Boil cream with sugar high heat until reduced by half. Strain stock and add to cream.Reduce heat to low and continue to reduce, beating vigorously to produce a frothy texture. Add lemon juice and season with salt and pepper to taste. This sauce delightfully accompanies fowl, notably duck.

 

 

MATCHA SAUCE

INGREDIENTS:

2 Cups fish stock¼ Teaspoon Heavy Cream¼ Teaspoon Matcha TeaSeveral Drops of Lemon Juice   Salt   Pepper

PREPARATION:

Boil stock over high heat until reduced b half. Add cream and continue boiling until thick enough to coat the back of a spoon. Reduce heat to low, add Matcha and lemon juice and beat until a thick, light sauce is obtained. Season to taste with pepper and salt. Matcha sauce is delicious with sea trout and salmon.
