RECIPES OF TEA ICES AND ICED TEAS

CARIBBEAN ICED TEA
Countries in the Caribbean that were influenced by the British like to drink their tea hot or cold.
Put a couple of bruised mint leaves in the bottom of a tall glass. Fill with cracked ice. Pour in a lightly steeped tea. Served with lemon wedges.
Serves 1.

TROPICAL ICED TEA
Fill a blender half full with crushed ice. Add 4 tsp. sugar and 11/2 cups strong, cold tea. Cover and blend on high speed for 1 minute or until the iced tea is thick and creamy. Pour into tall glasses.
Serves 4.

TEA FRAPPE
Pour cold tea into ice-cube trays and freeze. When frozen, put the tea ice cubes in a blender and shave or crush. Fill frappe or liqueur glasses with the ice. Pour your favorite liqueur(s) over top of the ice.

BRANDIED TEA
For a cool drink, place 2 brandied ice cubes in a teacup (see Branded Ice at beginning of chapter). Fill the cup three-quarters full with hot tea. Sweeten with sugar or honey if desired.
Serves 1.

RUM ICED TEA
Fill a tall glass half way with cracked ice. Pour 1 oz of dark rum over the ice. Then fill the glass with your favorite tea blend. Sweeten with sugar.
Serves1.
