    Afternoon Tea

    TEA ICED CUBES
    Into an ice-cube tray, pour a double – strength tea. Sugar may be added and dissolved into the tea. Freeze, then use when desired. Tea ice may be added to cocktails, iced teas, tea punches and frappes.

    BERRY ICE

    Heat 2 cups of freshly squeezed berry juice (squeezed through a cheesecloth from 4 cups berries) and sugar is dissolved. Freeze liquid in ice – cube trays. Use the berry cubes in iced teas and tea punches where a fruit flavor is required.
    Variation: This recipe can also be made by using 1 cup berry juice squeezed from 2 cups berries), 1 cup water and sugar to taste.

    LIQUEUR ICE
    Mix your favorite liqueur with a strong tea brew. Freeze the mixture in ice-cube trays. Serve liqueur ice in cocktails and in frappes when crushed ice is called for.


    FRUITTI ICED TEA

    Fill half of a pitcher with strong iced tea. Fill the other half with your favorite blend of fruit juices.
    There are so many combinations of mixed fruit juices on the market today. Anyone of these may be experimented with to create your own fruit-flavored iced-tea drink.
    Vary the proportions of iced tea to fruit juice to suit your taste.

    ADD FRUITS TO ICED TEA
    Add fruits which are in season to the iced tea. Serve the tea with fruits decorated at the rims of the glasses or lay fruits around the saucers when serving ice teas in teacups.
