TEA IN IRAQ

Tea arrived in Iraq from Persia. Iraqi tea is made with a samovar and a tea essence. Tea is drunk straight without milk or sugar, although sometimes a sugar lump is placed under one’s tongue or betweens one’s teeth, while the tea is being sipped.

Like its neighbors in the Middle East – Kuwait, Qatar and Egypt- Iraq ranks among the top tea consumers in the world.

CHAI BIL YANSOON (ANISE TEA)

Add ½ tsp of powdered aniseed or 1 tsp. of aniseeds to the teapot when steeping a strong tea essence to be used with the samovar.

CHAI BI WARDET AL BERTAKAAN (ORANGE - BLOSSOM TEA)
The Seville orange is bitter –tasting orange first known to the Greeks in the twelfth century. Orange drops made from the blossoms can be added to tea or to other food as a flavoring.
